Sorrel is a clumping perennial that produces an abundance of tart, bright green foliage starting in early spring. Mature leaves are tender enough to be eaten raw, though the tart flavor can be too strong unless it is mixed with other greens. Makes an excellent soup.
Sorrel prefers full sun to partial shade and needs little care. It grows in 1-2′ tall clumps that can be divided when they become too big. In hot weather it will bolt, sending up 3-4′ flower spikes, but I have not found this to affect the flavor.
