Good King Henry, Blitum bonus-henricus

Also called wild spinach or poor-man’s asparagus, Good King Henry is a traditional European green. Leaves taste similar to spinach when cooked. They can also be eaten raw, but may be slightly bitter.

Good King Henry is a clumping perennial growing 2-3′ tall. It prefers loamy, well-draining soil and partial shade in areas with hot summers. It is a cool-season crop and will bolt in hot weather.
